Act-On's Data Studio feature will make quick work of this. With Data Studio you can export all sorts of data straight to a BI too. Otherwise your option is download each form report and create your own reports outside of AO.

We use lots of forms, but we don't track / report on them very well. I'd like to export all form submissions, review by month (views, submissions) - so that I can track which forms (offers) are performing the best month of over month. How can I get at that data? How can I export all of my form data in one shot? What is possible?

Yeah, I'd like to know this, too. It seems like this should be a standard canned report. Just give me all form submissions with a date filter. And I'm sorry, but that Data Studio is not at all intuitive.
